Primitivo is a dark and tannic wine that smells and tastes of flowers, fruit, pepper, and blackberries. Zinfandel contains flavors of berry, cherry, blackberry, anise, and black pepper. California winemakers let Zinfandel grapes ripen until they have a lot of sugar, which gives the wine more alcohol.
The types of wine are, in addition to the dry wine, the Primitivo di Manduria Riserva which must be aged for 24 months, with at least 9 month in wood, and the Primitivo Dolce Naturale DOCG sweet, smooth and bold on the palate; these characteristics are also found in the Primitivo di Manduria sweet liqueur with a higher alcohol level.
Taking a hard right in a completely different viniferal direction, Primitivo is also used to make Primitivo di Manduria Dolce Naturale, a delicious dessert wine made by allowing the grapes to dry on the vines.
Sweet or Dry? Primitivo, as explained throughout this article, leans quite heavily on the alcoholic side of red wines and therefore comes with a far more rustic and tannic taste than many competitors on the market.
